Is a curbless walk-in shower possible in an older home?

Often it is, but it depends on the floor framing. We check joist depth during the walkthrough; if needed, we recess the subfloor so the shower floor sits flush with the room.

Why does waterproofing matter so much?

Tile and grout are not waterproof. The membrane underneath is what protects the framing. We use a tested system and flood-test the shower pan before any tile goes down.
